I have been a vegetarian for a long time but I have recently turned Vegan. My favorite Vegan cookbook is Chloe Coscarelli's. I made these ones for my birthday using most of her recipe for her Fluffy Coconut Cupakes that can be found at
http://chefchloe.com/sweets/fluffy-coconut-cupcakes.html. I just used non-hydrogenated shortening and almond milk in the frosting instead of un-refined coconut oil and coconut milk. They tasted like sugar cookies! Yum!
